Un dato impressionante, che testimonia come questa bevanda sia ormai un fenomeno globale.<\/p>\n<p>Nel Regno Unito, ad esempio, si stima che vengano consumate circa <strong>98 milioni di tazzine di caff\u00e8 al giorno<\/strong> (British Coffee Association). Questo dato ci mostra quanto il caff\u00e8 abbia conquistato un ruolo centrale nella quotidianit\u00e0 dei britannici, affiancandosi sempre di pi\u00f9 al tradizionale t\u00e8 e aprendo sempre di pi\u00f9 nuove opportunit\u00e0 per i brand del settore.<\/p>\n<h2 class=\"fusion-responsive-typography-calculated\" style=\"--fontsize: 32; line-height: 1.2;\" data-fontsize=\"32\" data-lineheight=\"38.4px\">Quali coffee beverages preferiscono i britannici?<\/h2>\n<p>Secondo le nostre ricerche, basate su oltre 2000 profili di consumatori, i tre tipi di bevande a base caff\u00e8 pi\u00f9 consumate e apprezzate nel Regno Unito sono il <strong>\u201clatte\u201d seguito da cappuccino e da flat white<\/strong>.<\/p>\n<p>Ci\u00f2 suggerisce che i consumatori britannici tendono a <strong>preferire intensit\u00e0 pi\u00f9 basse rispetto all\u2019espresso<\/strong>: la presenza di latte, infatti, attenua l\u2019intensit\u00e0 del caff\u00e8 e ne bilancia il il gusto verso note meno amare, pi\u00f9 morbide al tatto e accessibili anche a chi preferisce bevande pi\u00f9 dolci da sorseggiare nel tempo.<\/p>\n<h2 class=\"fusion-responsive-typography-calculated\" style=\"--fontsize: 32; line-height: 1.2;\" data-fontsize=\"32\" data-lineheight=\"38.4px\">Differenze per genere ed et\u00e0<\/h2>\n<p>Analizzando i dati demografici, abbiamo osservato alcune differenze nell\u2019approccio al caff\u00e8 in base a genere ed et\u00e0. Il <strong>latte<\/strong>, ad esempio, \u00e8 apprezzato da tutte le fasce d\u2019et\u00e0, ma risulta<strong> particolarmente popolare tra i pi\u00f9 giovani<\/strong>, mentre il <strong>cappuccino tende ad essere preferito dalla generazione pi\u00f9 adulta<\/strong>.<br \/>\nInoltre, in generale, le donne sembrano apprezzare maggiormente il Latte rispetto agli uomini.<\/p>\n<h2 class=\"fusion-responsive-typography-calculated\" style=\"--fontsize: 32; line-height: 1.2;\" data-fontsize=\"32\" data-lineheight=\"38.4px\">Ma qual \u00e8 la differenza tra queste tre bevande?<\/h2>\n<p>Semplificando, potremmo delineare le attese sensoriali che possiamo avere da ogni preparazione partendo dal rapporto caff\u00e8\/latte che caratterizza la ricetta di ognuna:<\/p>\n<p>Il <strong>latte<\/strong> \u00e8 la bevanda pi\u00f9 dolce e meno intensa: 1 parte di espresso - solitamente single shot - estratto in una tazza grande (220-250ml), 3 parti di latte e 1 parte di crema di latte montata finemente a creare una sottile ed elastica copertura alla superficie della tazza.<\/p>\n<p>Il <strong>cappuccino<\/strong> come tutti lo conosciamo oggi, ovvero la bevanda tipica del mercato italiano nata dalla reinterpretazione di una storica preparazione viennese, ha una ricetta pi\u00f9 bilanciata nel rapporto latte\/caff\u00e8\/crema (1:1:1) che si riflette in un profilo sensoriale caratterizzato da una sinergia tra il caff\u00e8 ed il latte nelle due texture capaci di generare insieme aromi ascrivibili alle categorie del caramello, della frutta secca e delle spezie da pasticceria, sostenuti dal piacevole contrasto dolce amaro e da una texture areata, soffice e sciropposa. La nota caratterizzante?? Una crema di latte pi\u00f9 ferma, spessa, areata e montata a copertura della tazza (180-200ml).<\/p>\n<p>Infine, il<strong> flat white<\/strong> \u00e8 la scelta pi\u00f9 \u201cshort\u201d e amata da chi ricerca i sentori dell\u2019espresso. Qui invertiamo i rapporti: 2 parti di espresso, un doppio in tazza media (150ml), una parte di latte e una microschiuma elastica e vellutata a rendere pi\u00f9 setoso il percepito tattile di una bevanda addolcita e arricchita dal latte ma che non nasconde l\u2019impronta digitale dell\u2019espresso che ne \u00e8 base ed ingrediente principale (Canal Coffee).<\/p>\n<h2 class=\"fusion-responsive-typography-calculated\" style=\"--fontsize: 32; line-height: 1.2;\" data-fontsize=\"32\" data-lineheight=\"38.4px\">Perch\u00e9 queste preferenze?<\/h2>\n<p>Abbiamo indagato le possibili motivazioni alla base di questa scelta, analizzando i nostri dati e mettendoli in relazione a quelli di <strong>un\u2019interessante ricerca di NESCAF\u00c9<\/strong> (NESCAF\u00c9 - Great Sensations), dove sono state coinvolte pi\u00f9 di 2000 persone.<\/p>\n<p>Quest\u2019ultimo studio ha rilevato che tra i consumatori britannici c\u2019\u00e8 una particolare predilezione per il gusto dolce e per le sensazioni ad esso correlate. Infatti, gli <strong>aromi dominanti e maggiormente graditi risultano essere cioccolato, vaniglia e caramello<\/strong>.<\/p>\n<h3 class=\"fusion-responsive-typography-calculated\" style=\"--fontsize: 28; line-height: 1.2;\" data-fontsize=\"28\" data-lineheight=\"33.6px\">Pattern di gusto pi\u00f9 ampi oltre il caff\u00e8<\/h3>\n<p>In linea con questa evidenza, la nostra ricerca ha mostrato un pattern interessante: i consumatori che prediligono bevande a base di latte, come quelle citate prima, tendono a mostrare una preferenza significativa anche per altre opzioni, quali <b>c<\/b><strong>ioccolato al latte o al caramello, banana, succo all\u2019ananas e aroma di vaniglia<\/strong>. Questo potrebbe suggerire che le scelte legate al caff\u00e8 possano riflettere pattern di gusto pi\u00f9 ampi, che si estendono oltre le sole bevande.<\/p>\n<p>Come avvalorato dai dati di preferenza raccolti da Nescaf\u00e8, il modello di caratterizzazione e clusterizzazione dei consumatori Vinhood pu\u00f2 aiutare spiegare il successo delle espresso milk beverages integrando il layer sensoriale all\u2019interpretazione del path decisionale nel consumo delle bevande: non solo quindi per la convenience, il forte branding e il senso di appartenenza ad un determinato modello di consumo, ma \u00e8 anche per le caratteristiche intrinseche dei prodotti, la capacit\u00e0 del latte di ammorbidire e addolcire l\u2019espresso, e la versatilit\u00e0 nella preparazione di altre bevande con l\u2019aggiunta di spezie o sciroppi, in versione sia calda che fredda, che il consumatore preferisce e sceglie cosa acquistare.<\/p>\n<h3 class=\"fusion-responsive-typography-calculated\" style=\"--fontsize: 28; line-height: 1.2;\" data-fontsize=\"28\" data-lineheight=\"33.6px\">Opportunit\u00e0 per i brand<\/h3>\n<p>Per i brand, questo significa opportunit\u00e0 concrete per sviluppare prodotti e offerte mirate, sfruttando la variet\u00e0 di aromi (oltre 1000 composti sensorialmente attivi (Vezzulli et al., 2023)) che il caff\u00e8 pu\u00f2 sviluppare applicando diversi sistemi e profili di tostatura, la miscelazione di lotti di diverse origini, processi post-raccolta, variet\u00e0, per diversificare e segmentare l\u2019offerta a seconda delle occasioni d\u2019uso (espresso o milk beverages) dei mercati e del consumatore target.<\/p>\n<h2 class=\"fusion-responsive-typography-calculated\" style=\"--fontsize: 32; line-height: 1.2;\" data-fontsize=\"32\" data-lineheight=\"38.4px\">Fonti<\/h2>\n<p>Kingsley, J., O'Brien, J., &amp; Bailey, A.
